How to Make Classic No Bake Cookies

Begin by combining a stick of butter with the sugar, milk and unsweetened cocoa in a medium saucepan. By cooking the sauce we are dissolving the sugar and giving the chocolate coating a smooth texture.

Over medium high heat bring the mixture to a boil, making sure to whisk the entire time. This will keep the bottom from burning.

Once the mixture begins to boil, allow it to continue to boil for 1 minute .

Remove the mixture from the heat and stir in the peanut butter and vanilla. Adding the vanilla to a hot mixture off of the heat keeps it from evaporating.

Look at those peanut butter swirls!!

Once the peanut butter is mixed in and you have a smooth mixture, add the quick cook oats.

Why is it important to use Quick Cook Oats in your Classic No Bake Cookies?

Quick cooking oats do not require as much moisture as regular oats do. Using quick oats gives you a less dry and crumbly cookie, with just the right amount of moisture.

Stir the quick cooking oats into the chocolate peanut mixture until they are all completely coated.

Then take a cookie scoop <1.5 tablespoons>and scoop mounds of the oatmeal mixture onto a parchment lined cookie sheet.

Allow them to cool at room temperature for 15-20 minutes or until set and they are ready to eat! They really are that simple!

What if your Classic No Bake Cookies don’t set up after 20-30 minutes?

If you notice that the cookies are not setting up after about 20 minutes then just put them in the refrigerator to continue setting up.

How to Store your Classic No Bake Cookies?

Classic No Bake Cookies can be kept at room temperature for up to 3 days. They can also be stored in the refrigerator or freezer for up to 3 weeks. The best part is that they will keep their good flavor and texture.

No matter how you store them I can guarantee one thing…they won’t last 3 weeks. At least they won’t if my family has anything to do with it.

No Bake Cookies Tips

After making this recipe numerous times with fails and successes, I’ve learned a few tricks. Let me share some tips:

  • Use old-fashioned rolled oats or quick oats. When it comes to these cookies, it’s all about which texture you prefer. Old fashioned rolled oats will produce a thicker, heartier cookie. And quick oats will produce a finer textured, chewier cookie. Either works! Or do what I do and use a 50/50 mix of both!
  • Watch your boiling time. To get the perfect consistency, you’ll need to keep an eye on your butter and sugar mixture. Once the mixture starts to fully boil (not just simmer on the edges), let it boil for 2 minutes. Set a timer! This will allow the sugar to get close to 230F (just below the soft ball stage), allowing them to set-up properly when cooled.
  • Cookies too soft or too hard? Most recipes online say to cook for 1 minute, but this always produced overly soft, sticky, gooey cookies for me that never firmed up. You really need to cook the sugar mixture at least 2 minutes. Humidity can also affect the boil time. So, if your cookies are too soft, boil the sugar an extra 15-20 seconds next time. And if they’re too hard (almost like candy) and crumbly, boil the sugar for less time.
  • Still too soft? The cookies will be naturally softer with quick cooking oats. Old fashioned rolled oats will absorb a little more moisture and help them firm up. That’s why I love to use a 50/50 combination of quick cooking and rolled oats. It makes for the perfect texture.
  • Still too soft? Let the cookies sit out overnight uncovered. They’ll naturally firm up as the moisture inside the cookies evaporates.

This no bake cookies recipe is my Aunt Jackie’s recipe, and I love it. I love that you don’t have to turn on the oven. If it’s busy baking something else . . . no problem! If it’s the summer and hotter than Hades . . . no problem! Just whip these no bake cookies up on the stovetop and ENJOY! YUM YUM YUM!

Boil ingredients in a pot, add a few more things off of the heat, and – VOILA! – you have cookies. No oven necessary! Enjoy!


No Bake Cookies

I love easy recipes. The simpler something is, the more I like it. I don’t like dirtying a ton of pots and pans and cooling racks, and just want things to be simple. The best no bake cookies should be simple. They have very few ingredients, are done in a single pot on the stove, and then scooped onto wax paper to cool. That’s it!

These no bake cookies have the classic chocolate and peanut butter flavor you expect from classic no bake cookies (or at least what I expect from no bake cookies.) I’ve made this recipe so many times and have never had them turn out weird or too runny. They’re perfect, so trust the recipe.

Even if you’re tempted to add more oatmeal to these no bake cookies, don’t. I promise it’s enough, and I promise they’ll set up just fine. I know it’s hard to find a good recipe on the internet because there are so many bad ones out there, but I’ve tested this one extensively, so I know it works really well!

A lot of recipes will tell you that you need to use a candy thermometer and cook the mixture until it reaches a specific temp, but that’s absolutely unnecessary.

The hardest part about the Best No-Bake Cookies is waiting for them to cool. I basically want to eat the mixture out of the pot with a spoon, but you know…society has rules. So I let mine sit on the wax paper until they’re cool enough to pick up and scarf down. They’re so good! And I can eat them for breakfast since they have oatmeal in them, right?


How to make the Best No Bake Cookies:

Step 1: Combine sugar, butter, cocoa and milk in a saucepan over medium heat.

Step 2: Whisk until smooth and stir constantly over medium heat until it begins to boil.

Step 3: Remove pan from heat once it begins to boil. If you let it boil over the heat for too long, your no bake cookies will be too dry.

If you are having a problem with your cookies crumbling too easily or being dry, be sure to take them off the heat earlier.

Step 4: Add creamy peanut butter and vanilla and whisk until smooth.

Step 5: Add quick oats and mix until well combined.

You can use old fashioned oats if you don’t have quick oats on hand, but the texture will be different. We prefer the texture and consistency of quick oats.

Step 6: Drop by spoonfuls or using a cookie scoop onto foil or waxed paper. These will hold their shape, so however you let them cool is how they will look.

My cookies are rounder because I used a cookie scoop, but growing up our mom always spooned them onto foil so it is totally a preference thing!

Step 7: Let cool.

However, these are AMAZING when they are warm, too, so we won’t judge you if you can’t wait to dig in.
