Notes

For the mango-lime purée, I blended four bags of frozen mango slices (I used Trader Joe’s) and the juice from two limes.

For the jalapeño-thyme simple syrup, I combined 1 cup of sugar, 1 cup of water, a jalapeño pepper (chopped finely and seeded), and three sprigs of thyme. I boiled the contents for 30 seconds and stirred until the sugar dissolved, then allowed the syrup to cool, and strained the contents.

While the above recipe is for one drink, the purée and simple syrup are for an entire party.

Indian Lassi Recipe

People always ask me for an Indian Lassi recipe. I mean, it's not very complicated, but I realized it's only easy if you've done it all your life. It's embarrassingly simple, so to jazz it up I'll show you several variations of Lassi, all of which are traditional.

I know there are some phenomenal avocado lassi and blood orange lassi recipes out there, or ones that involve strawberries but those fruits aren't widely available in India. So, I'm only including the various ways I grew up drinking it.

For reference, I was raised on Punjabi Lassi. This is characterized by a full-fat, very filling salted lassi drunk ice cold with a layer of froth on it as it gets churned.

I mention this because Lassi Recipes vary across India.


How to make mango lassi

1. Wash, peel and cube mangoes. Chill them along with curd and water. Instead of water you can also use buttermilk or ice cubes. I used 1 cup yogurt, ¾ cup fresh set curd which was slightly runny and then about ¼ to ½ cup water.

You don&rsquot need to stick on to the measurements. Alter them to suit your taste as mentioned in the notes above.

2. Pour water, mangoes, sugar and cardamom powder as well.

3. Next cover and blend until very smooth. Make sure there are no mango fibers left.

5. Blend just until smooth.

6. Taste it. Lastly adjust sugar, mangoes, curd or water as needed. Do adjust the consistency to suit your liking.

Finally garnish mango lassi with chopped pistas. Serve chilled.

How to make salted lassi recipe (Step by Step Photos):

2) Add salt, black salt and roasted cumin powder.

4) Now whisk it using madani (traditional wooden hand blender) till it gets frothy. Alternately you can use electric hand blender as well.

5) If masani is used then it will take good 5-6 minutes to get frothy.

6) Pour into the serving glasses and serve.

If not serving right away then keep refrigerated. So it stays chilled. It tastes best when served chilled.

Serving suggestion:Enjoy the salted lassi as a beverage any time of the day especially during hot summer days. You can have a glass of it along with or after your meal.

  • Always use chilled yogurt and chilled water. If both are nice and chilled then you can serve right away.
  • Alternately you can make ahead of time and chill in the refrigerator for 2-3 hours. And then serve.
  • Or you can add few ice cubes.
  • we are using more yogurt when compared to water. So make sure that yogurt is not sour. Otherwise drink will have overpowering sour taste.
  • If you are serving this on fasting days, skip the black salt and salt in the recipe. Instead use rock salt.

Ingredients of Dry Fruit Lassi

  • 1 cup yoghurt (curd)
  • 2 green cardamom
  • 2 tablespoon raisins
  • ice cubes as required
  • 2 tablespoon almonds
  • 1 tablespoon coconut
  • sugar as required
  • honey as required

How to make Dry Fruit Lassi

Step 1

To prepare this recipe, first soak raisins in some water for 15 minutes. Keep aside. Also, roughly chop almonds for the required quantity.

Step 2

Now, combine curd, grated coconut, almonds, raisins, sugar, and cardamoms in a grinder. Add ice cubes, as required.

Step 3

Blend this mix in the grinder for a minute or till all the components are well mixed and a thick consistency is achieved.

Step 4

Pour the prepared dry fruit lassi in a pub glass and serve using honey as garnish.


To begin making the Mango Lassi Recipe, firstly peel the mangoes and cut them into small chunks. Squeeze out the excess pulp from the seed by adding a little water.

Next combine all the main ingredients including Mangoes, Curd, Sugar, Ice and blend into a smooth paste. Add any additional water if required to adjust the consistency of the Mango lassi. Taste and add more sugar or yogurt if required to suit your taste.

Once blended, serve the Mango Lassi immediately garnished with either mint leaves or chopped pistachios.

Lassi Recipe

Lassi is a traditional summer drink from the state of Punjab. This popular, creamy, sweetened yogurt drink is a gem among Punjabi food recipes. It is a common sight in the North especially in Punjab, Rajasthan, UP and Delhi to find street vendors selling frothy lassi in matka (clay pots). There are three versions of lassi – salted, sweet and masala. Sweet lassi is slightly heavy due to the use of rich milk and sugar. The key to good lassi is to use thick homemade yogurt (curd) that is absolutely chilled and hand blended with a wooden churner. The yogurt should be fresh and sweet in flavor.
