First I melted the butter and mixed it with honey. I also put 2 tablespoons of brown sugar.
In a bowl I put the flour, egg, salt, spices and baking soda. I then poured the butter and honey.
I kneaded until smooth. I put the dough in a transparent foil and put it in the fridge until the next day (leave it for at least a few hours).
After I took it out of the fridge, I left the dough for about 30 minutes at room temperature.
I spread a sheet of dough 5-6 mm thick on the kneaded worktop.
I cut the dough and put the cut shapes in the tray lined with baking paper, with a distance between them. I baked at 170 degrees, about 9 minutes, in the preheated oven.
I decorated the gingerbread with Nutella, as simple as possible.
The gingerbread keeps very well in airtight metal boxes. In the first days after baking it is crispier, so have a little patience :)
