Red and green cabbage are mixed with an array of vegetables, then tossed with a spicy lime dressing.

- 1/2 medium head green cabbage, shredded
- 1/2 medium head red cabbage, shredded
- 1 red pepper, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 red onion, thinly sliced
- 2 carrots, grated
- handful chopped fresh coriander
- 8 tablespoons olive oil
- 4 tablespoons lime juice
- 1/2 teaspoon ground cumin
- 2 cloves garlic, crushed
- 1 tablespoon hot sauce, or to taste
- salt and freshly ground black pepper to taste

- In a large bowl, combine green cabbage, red cabbage, red pepper, yellow pepper, red onion, carrots and coriander. In a small bowl, mix together olive oil, lime juice, cumin, garlic and hot pepper sauce. Toss dressing with cabbage mixture until evenly coated. Season with salt and pepper. Let stand 30 to 60 minutes before serving.

Lately I have begun to use 1/4 cup of olive oil instead of a 1/2 cup, Key Lime Juice instead of regular lime juice and twice the hot sauce.-08 Aug 2005

Overall, everyone gave this a three. I brought it to a cookout and we all agreed it needed a little something added to give it a little zip. Maybe some vinegar of some sort. But I'll try it again with some changes! Thanks!-01 Aug 2004
